  1. Preheat oven to 175 °C (350 °F). Grease a 23 × 13 cm (9 × 5 in) loaf pan.
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Add wet ingredients. Stir in the melted butter, sugar, egg, and vanilla until combined.
  4. Add dry ingredients. Sprinkle in the baking soda, salt, and flour. Stir until just combined — do not overmix.
  5. Pour into the loaf pan and smooth the top.
  6. Bake for 50–55 minutes until a toothpick inserted in the centre comes out clean.
  7. Cool in the pan for 10 minutes, then turn out onto a wire rack.

Tips

Substitutions & variations
  • Chocolate chip: Fold in ½ cup chocolate chips before baking.
  • Walnut: Add ¾ cup chopped walnuts to the batter.
  • Healthier swap: Replace half the flour with whole wheat flour and reduce sugar to 100 g.
  • Freezer-friendly: Wrap cooled slices individually and freeze for up to 3 months.
