  1. Toast the bread until golden and crisp.
  2. Prepare the avocado. Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork to your preferred texture — chunky or smooth.
  3. Fry the eggs. Heat olive oil or butter in a non-stick pan over medium heat. Crack in the eggs and cook until the whites are set but the yolks are still runny, about 3 minutes.
  4. Assemble. Spread the smashed avocado generously on each toast. Top with a fried egg.
  5. Season with everything-bagel seasoning, red pepper flakes, and a pinch of flaky salt. Add microgreens if desired.

  • Poached egg: Drop the egg into gently simmering water for 3 minutes instead of frying.
