Prepare the avocado. Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork to your preferred texture — chunky or smooth.
Fry the eggs. Heat olive oil or butter in a non-stick pan over medium heat. Crack in the eggs and cook until the whites are set but the yolks are still runny, about 3 minutes.
Assemble. Spread the smashed avocado generously on each toast. Top with a fried egg.
Season with everything-bagel seasoning, red pepper flakes, and a pinch of flaky salt. Add microgreens if desired.
